I tried something new last night. I had wanted to experiment for ages and try my own version of veggie patties. Last night, after a lot of procrastinating and what felt like "cookers block", I finally started chopping an onion. Once I got started I just kept adding things, but it was so difficult to think of anything to cook last night! It was late and I was tired and I may have over blended the mixture but the result was delicious and has made an excellent, healthy lunch for a sunny Wednesday.

Veggie pattie wraps

  • One medium brown onion
  • 1 cup of rice (I was going to use brown rice for a healthier option but I didn’t have the patience to wait 25 minutes for it to boil)
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1 tsp dried coriander
  • 400g of kidney beans
  • 5 Florets of broccoli
  • 1 half medium red capsicum
  • 1/4 cup chickpeas
  • 2 cloves of garlic
  • 3 Tsp flour
  • 1 small potato

Add all the ingredients to a blender or a bowl and blend with a hand mixer. Be careful not to over blend or you will end up with a bit of a mess like I did. Put the mixture in the fridge for an hour to harden. Add some oil to a pan and shape the mix into patties and fry well on both sides.

Add some cranberry sauce to a whole wheat wrap. Lay Romaine lettuce, sliced gherkin and the patties on top. I added ketchup on top of the patties and covered that with a layer of cheese.

This was such a delicious lunch I wish I had brought two. Luckily, I froze the remaining mixture so I can easily cook some more for an easy dinner.
Next time I am going to try adding quinoa to the mix.

I didn’t take any photos – the mixture wasn’t very photogenic, but I’ll try to remember next time I make my lunch.
